There are two packs, the Career Pack and the Home Office Pack. Open Settings in the game and tap Restore purchases. That asks Apple whether the Apple Account signed in on this device owns them. If a pack still does not unlock, make sure you are signed in with the same Apple Account you bought it with.
Buying either pack removes it, and it removes it completely: no banner, no full screen advert, and no consent form on launch. If you would rather keep the free version and change what you agreed to, open Settings and tap Advertising privacy choices. That reopens the consent form, and the entry is there whenever the form asks for a decision. What is processed for advertising is set out on the privacy page.
On the device, in the app's own storage. They are not in iCloud and do not move between devices. Deleting the app deletes them.
Settings → Erase everything deletes every career and every record on the device. It cannot be undone. It does not remove a pack you bought either, because a purchase stays with your Apple Account.
Settings → Calm mode turns that off. The game also follows the system Reduce Motion setting.
